Summer Rolls and Peanut Sauce

Can you imagine the crunch of those veggies when you eat it and dip in peanut sauce? 🤤 Without further delays here is the recipe for this protein packed- dish. 

Ingredients
1/4 thinly sliced medium sized aubergine



 

Peanut Sauce
1 1/2 tablespoon peanut butter (I used crunchy)

Instructions

Glazed Aubergine

  1. Fry the aubergine in some oil until golden, then add the rest of the ingredients and cook until everything is nice and sticky

Peanut Sauce

  1. Combine everything together and thin with water if necessary

Summer Rolls

  1. Wet your wrappers one by one, I like to do this under warm running water for about 20-30 seconds. It should still be able to hold its shape, the wrapper will soften more as it sits

  2. Place your wet wrapper on a wooden cutting board and add your fillings. Wrap everything up like a burrito, try to do it as tight as possible 

  3. Cut your finished roll in half or enjoy as is!
